I stumbled upon this really impressive list of sample ASP.NET projects by Dody Gunawinata called practical-aspnetcore.

This incredibly helpful if, like me, you are asked to come up with realistic code samples this might help kick start the process. Also if you are looking to grok on of the many ASP.NET concepts via code. You can experiment with these samples using Visual Studio or Visual Studio Code.
As of this writing there are 306 samples across ASP.NET Core 2.1, 2.2, 3.0 and 3.1!
